Jamones Bronchales’ drying facility is the highest in all of Aragón, located in the Sierra de Albarracín (Teruel). It is also one of the highest in the world. This location results in virtually nonexistent pollution levels, and with the dry northern air, the hams cure slowly and appropriately, from the inside out. This process leads to more than 60% of its fat being healthy or unsaturated.
