The milk used for making our cheeses comes from local livestock, always aiming for a Km0 production and a unique product enriched by the nuances of our environment. The main characteristic of our cheese is that we produce it with raw milk, avoiding the pasteurization process (heating the milk to 70º Celsius), thus preserving its natural flavor, aroma, and texture without altering its properties.
